Heavenly desserts for your table this Easter

Two decadent Easter desserts which will knock the Easter Bunny's socks off!

Serving up traditional food at Easter is something every household has mastered by now. But how about spicing up your Easter lunch or dinner’s dessert?

The News, with the help of Pick n Pay, presents a selection of great Easter dessert treats which will indulge in your every desire for more.

First up – Hot cross bread and butter pudding:

Hot cross bread and butter pudding.

Main ingredients:

2 large eggs

100ml milk

100ml cream

1 tbsp (15ml) brown sugar

1 tsp (5ml) each ground cinnamon and ginger

50g seedless raisins

2 tbsp (30ml) butter, for greasing

4 hot cross buns, sliced

100g milk chocolate, chopped into chunks

100g icing sugar, for dusting

Method:

Preheat oven to 180°C.

Place eggs, milk, cream, sugar and spices in a bowl and whisk to combine.

Stir in raisins.

Grease a medium-sized ovenproof dish or 4 individual ramekins with butter.

Place sliced buns in dish and pour the custard mixture over.

Sprinkle chocolate chunks on top.

Bake until custard sets, about 20–25 minutes.

Dust with icing sugar.

White chocolate tart:

Main ingredients:

120g Bakers Tennis Biscuits, crushed

60g Lurpak Salted Butter, melted

250g Lindt Classic White Chocolate, broken into pieces

125ml PnP fresh cream

2 tbsp (30ml) Lurpak Salted Butter

125g PnP Imported Strawberries, sliced

2 tbsp (10ml) PnP Flaked Almonds, toasted

A dash of PnP Icing Sugar, for dusting

Method:

Preheat oven to 160°C.

Mix tennis biscuits and butter together and press into the base of a 20cm loose-bottomed tart pan.

Bake for 7–10 minutes, until just golden. Allow to cool.

Gently heat chocolate, cream and butter in a saucepan, stirring until chocolate melts.

Pour mixture through a sieve into the tart pan, allow to set in fridge for at least 4 hours.

Top with fresh fruit, almonds and a dusting of icing sugar.

Serve immediately.

Helpful hint: Wipe the knife clean with a warm cloth or dip into hot water after cutting each slice.

More good ideas:

Top with any acidic fruits, such as berries or kiwi fruit.

Use milk chocolate in place of white.
