Celebrate Spring with Malva pudding flavour ice-cream

Malva pudding is a classic South African dessert, known for its sweet, sticky sponge soaked in a warm, buttery syrup. Now, imagine all that flavour turned into a creamy, refreshing ice-cream! Made with just a few simple ingredients, you can whip up this summer treat in no time. Recipe compliments of Joekels.

Ingredients

For the ice-cream:

  • 500ml whipping cream
  • 2/ 3 cups condensed milk
  • 1 tablespoon vanilla essence

For the toppings:

  • Crumbled malva pudding sponge
  • Apricot jam

For the sauce:

Method

  1. In  a bowl, mix the whipping cream for 2-3mins until stiff peaks form.
  2. Fold in the condensed milk and vanilla essence.
  3. Stir in your Malva pudding sponge.
  4. Pour into a freezer safe container and drizzle with apricot jam.
  5. Freeze for 3-5 hours.
  6. In a saucepan, brew your tea for 2 minutes, and stir in the butter and brown sugar.
  7. Simmer for an additional 2-3 minutes, reducing to a sauce.
  8. Serve the ice cream with a drizzle of tea sauce and enjoy!
