Creamy one-pot pasta (with almost no washing up)
Top with chopped parsley or make it heartier by adding cooked chicken, sausage, spinach, or a handful of peas.
When you’re staring into the fridge after a long day, the last thing you want is a pile of pans and complicated steps. That’s where this creamy, one-pot pasta steps in. This recipe is a weeknight winner. It uses cupboard staples and takes minimal effort – no standing over the stove, no stirring, and barely any clean-up. Recipe compliments of Instant Pot.
Ingredients
- 1 Jar of Store bought Pasta sauce
- 250ml of Chicken Stock
- 125ml Water
- 3 Cloves of Garlic, finely chopped
- 1 tsp Italian herbs
- ½ tsp Chilli flakes
- 250g Penne pasta
- 125ml Cream
- Grated Mozarella cheese (to garnish)
- Fresh Parsley, chopped (to garnish)
Method
- In a pressure cooker, add the pasta sauce, chicken stock, water, garlic, seasoning and pasta.
- Place the lid on top and then press Pressure cook. Using the dial, scroll to Pasta and press the dial to select it.
- When the timer option appears, use the dial to set the time to 5 minutes. Press the dial to set the time. The pressure setting will appear, using the dial set it to high. Then press start. After 5 minutes, the pressure cooker will then alert you that it is ready. Open the steam valve. Once the steam has been released, remove the lid.
- Pour in the cream and stir.
- Sprinkle the mozzarella cheese on top and then replace the lid back on top for about 10 minutes until the cheese melts.
- Garnish with parsley and serve.
Tips: Depending on the pasta you use, you may have to pressure cook it for a bit longer. If after 5 minutes the pasta is not to your preferred texture, pressure cook it again for another 2 minutes.
