Winter warmer: Curried samp with tender lamb and fresh mint

Spiced curried samp and lamb is rich, warm, and full of flavour, making it the perfect dinner choice for a cold winter evening.

Samp has been a staple in Southern African kitchens for generations. It is simple, filling, and made to feed a crowd. Traditionally, it could take hours to cook until soft, often simmering slowly on the stove. These days, a pressure cooker does the hard work in a fraction of the time, without losing that delicious flavour. Recipe compliments of Instant Pot.

Prep time: 15 minutes | Cook time: 20 minutes | Serves: 4

Ingredients

  • 2 cups boiled samp
  • 800 g lamb pieces
  • Ginger garlic paste
  • Onion
  • Kashmiri masala
  • Turmeric
  • Cumin
  • Tomatoes
  • Whole spices
  • Water
  • Fresh coriander and mint

Method

  1. Sauté whole spices and onion.
  2. Add paste and tomatoes.
  3. Stir in spices and lamb.
  4. Pressure Cook 20 minutes.
  5. Natural release.
  6. Stir in samp and finish with herbs.
