Go crustless with this healthy French toast recipe

Ideal for mornings when you want something sweet but healthy, this dish blends cinnamon and vanilla's tastes with your favourite bread.

Crustless healthy French toast is a lighter take on the classic breakfast favourite. Recipe compliments of Joekels brands.

Ingredients

  • 2 slices of whole-wheat or brown bread
  • 2 large eggs
  • 1/4 cup low-fat milk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon honey or maple syrup (optional)
  • Cooking spray or a small amount of butter for the pan
  • Fresh berries or sliced banana for topping (optional)

Method

  1. In a shallow bowl, whisk together the eggs, low-fat milk, vanilla extract, and ground cinnamon.
    If you prefer a sweeter French toast, add a tablespoon of honey or maple syrup to the mixture and whisk until well combined.
  2. Remove the crusts from the slices of whole-grain bread, leaving you with crustless slices.
  3. Heat a non-stick skillet or frying pan over medium heat and lightly grease it with cooking spray or a small amount of butter.
  4. Dip each crustless bread slice into the egg mixture, ensuring both sides are coated.
  5. Place the coated bread slices in the heated skillet and cook for 2-3 minutes on each side, or until they turn golden brown and crispy.
  6. Remove from the pan and let any excess oil drain on a paper towel.
  7. Serve hot, topped with fresh berries or sliced banana for added nutrition and flavour.
  8. Enjoy with a cup of your favourite morning tea.
