Spicy chicken lettuce cups make the perfect light dinner

These spicy chicken lettuce cups are fresh, colourful, and absolutely bursting with flavour in every single bite.

Fresh, crunchy, and packed with flavour, these spicy chicken lettuce cups are perfect for a quick lunch, a light dinner, or a crowd-pleasing appetiser. The savoury chicken filling is stir-fried with garlic, ginger, soy, and a touch of heat, then spooned into crisp lettuce leaves that add crunch and freshness.

Ingredients

  • 500g minced chicken (or turkey)
  • 1 tablespoon vegetable oil
  • 2 garlic cloves, crushed
  • 1 small onion, finely chopped
  • 1 small red chilli, finely chopped (optional)
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1 carrot, finely diced
  • ½ red pepper, finely diced
  • 2 spring onions, chopped
  • 1 head of butter or iceberg lettuce, leaves separated and washed

Method

  1. Heat the vegetable oil in a large pan over medium heat. Add the onion, garlic, chilli, and ginger, and cook for 2–3 minutes until fragrant.
  2. Add the minced chicken and cook until browned, breaking it up with a spoon as it cooks.
  3. Stir in the soy, oyster, and hoisin sauces, followed by the sesame oil. Mix well to coat the chicken.
  4. Add the carrot and red pepper, and cook for another 3–4 minutes until the vegetables are tender but still a little crisp.
  5. Taste and adjust seasoning if needed. Remove from the heat and stir through half of the chopped spring onions.
  6. Spoon the mixture into the lettuce leaves, top with the remaining spring onions, and serve immediately.
