Easy-to-make strawberry cheesecake tartlets

Small, sweet, and beautifully balanced, these strawberry cheesecake tartlets bring together the creamy richness of cheesecake and the fruity brightness of strawberry jam in one perfectly bite-sized treat. Ingredients

  • 12 prepared tartlet shells
    250 ml (250g) cream cheese
  • 45 ml (¼ cup) sugar
  • 30 ml (2 Tbsp) butter
  • 1 egg
  • 30 ml (2 tbsp) cream
  • 15 ml (10 g) cake flour
  • Rhodes Quality Strawberry Jam

Method

  1. To make the filling, beat together the cream cheese, sugar and butter until light and smooth.
  2. Add in egg and mix until well blended.
  3. Stir in the cream and the flour.
  4. Pour the cheese filling into the baked pastry shells.
  5. Place 2.5 ml (½ tsp) of Rhodes Quality Strawberry Jam onto the middle of each tartlet and use a toothpick to swirl the jam into the cheesecake mixture.
  6. Bake in an oven preheated to 180ºC for 10-12 minutes until just set.
  7. Remove from the oven and cool.
