Banoffee pie with caramel treat and dark chocolate

Instead of baking and slicing a large pie, the layers of banoffee are arranged in small glasses, making this dessert easier to serve.

If you love dessert but don’t feel like baking, this easy banoffee pie in a glass is exactly what you need. It’s creamy, sweet, and has just the right balance of banana, caramel and crunch.

Ingredients

  • 1 packet digestive or tennis biscuits (about 200g), crushed
  • 4 Tbsp melted butter
  • 1 can (385g) caramel treat
  • 3 ripe bananas, sliced
  • 1 cup (250ml) fresh cream
  • 1 Tbsp icing sugar
  • 1 tsp vanilla essence
  • Dark chocolate shavings, for topping

Method

  1. Mix the crushed biscuits with the melted butter until the texture feels like damp sand. Spoon a few tablespoons into each glass and press it down lightly with the back of a spoon.
  2. Spoon a layer of caramel treat over the biscuit base. You can use the back of a teaspoon to spread it evenly. If your caramel is too thick, loosen it slightly with a splash of warm milk before layering.
  3. Place a few slices of banana over the caramel. These will add natural sweetness and freshness to the dessert.
  4. In a mixing bowl, whip the cream with icing sugar and vanilla until soft peaks form.
  5. Add a layer of whipped cream on top of the bananas. You can repeat the layers if you’re using taller glasses: biscuit, caramel, banana, and cream again.
  6. Top with more banana slices and a sprinkle of dark chocolate shavings.
  7. Refrigerate for at least 30 minutes before serving.
