Rosé and strawberry frosé

This cocktail serves four to six people, but it goes down so quickly that you might want to make a bit more if you have friends around.

This chilled, fruity cocktail is easy to make. You can serve it when friends stop by or mix up a batch for a lazy afternoon. You only need a few ingredients and a little prep the night before.

Ingredients

  • 1 bottle dry rosé
  • 300 g strawberries, hulled and halved
  • 50 g caster sugar
  • Juice of 1 lemon

Method

  1. Pour the bottle of rosé into a deep roasting tin. Place the tin in the freezer and leave it overnight. The wine will not freeze solid because of the alcohol but it will firm up enough to blend.
  2. The next day place the strawberries in a bowl. Sprinkle the caster sugar over them. Leave the bowl to stand for about 30 minutes. The sugar will draw out the juices and soften the fruit.
  3. Scoop the frozen rosé into a blender. Add the strawberries along with the juice in the bowl. Pour in the lemon juice. Blend until smooth. Taste and adjust the sweetness or sharpness if needed. Divide the mixture between glasses and serve at once while it is still icy.
