Immune support lemon and ginger green tea popsicles

Ginger and lemon are known for supporting digestion and immunity, making these popsicles a healthier choice than sugary ice lollies.

These lemon and ginger green tea popsicles are a useful make-ahead option for warm days. They’re lightly sweetened, easy to freeze and don’t taste like a dessert, which makes them a good alternative to sugary ice lollies. They also double up as a quick drink base, since you can drop one into a mug and let it melt into hot water when you want a simple tea. Recipe compliments of Joekels.

Ingredients

  • 2 Tetley lemon-flavoured green tea bags
  • 4 tbsp honey or golden syrup
  • ½ finger fresh ginger, unpeeled
  • 1 medium lemon, thinly sliced
  • 2 cups water
  • Popsicle sticks
  • Popsicle moulds

Method

  1. Slice the ginger into thick pieces and add to a medium saucepan with the water.
  2. Bring to a boil, then add the tea bags and honey, stirring to dissolve.
  3. Reduce the heat, add the lemon slices and simmer gently for 10 minutes.
  4. Remove from the heat and strain the liquid into a jug, discarding the solids.
  5. Allow to cool for about 5 minutes.
  6. Pour into popsicle moulds, insert sticks and freeze for 4 hours or overnight.
  7. To release, stand the moulds in a bowl and pour boiling water around the outside.
  8. Remove from the moulds and serve immediately.
