Flapjacks with chocolate spread and fresh berries

These light, airy flapjacks are delicious served as a sweet treat or dessert, topped with melted chocolate and stawberries.

Flapjacks sit somewhere between a pancake and a small griddle cake but are quicker to make and easier to cook in batches. This version uses sour cream in the batter. The acidity works with the raising agent to give the flapjacks a light, fluffy lift. It also helps keep the middle soft and tender, so you get that golden outside and cloud-like centre everyone hopes for in a weekend stack. Cook them gently over medium heat, flip when little bubbles appear on top, and serve warm with chocolate spread and fresh berries. Recipe compliments of LANCEWOOD.

Ingredients

For the flapjacks:

  • 1 cup flour
  • 3 tbsp castor sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup sour cream
  • ¼ cup milk
  • 2 tbsp melted butter
  • 1 egg
  • Sunflower oil, for frying

To finish:

  • Chocolate spread
  • Fresh strawberries
  • Fresh raspberries
  • Fresh blueberries

Method

  1. Sift the flour, sugar, baking powder and salt into a bowl.
  2. Whisk together sour cream, milk, melted butter and egg.
  3. Add the wet ingredients to the dry and mix until smooth.
  4. Heat a thin layer of oil in a pan over medium heat.
  5. Spoon batter into the pan and cook until bubbles form on the surface.
  6. Flip and cook until golden on the other side.
  7. Remove and repeat with remaining batter.
  8. Spread with chocolate and top with fresh berries before serving.
