Easy-to-make soft baobab milk bread recipe
This baobab milk bread celebrates World Milk Day on 1 June with a soft loaf made with full-cream milk, butter, and a golden egg wash.
World Milk Day is celebrated every year on 1 June, a wonderful excuse to bake the perfect loaf. This milk bread is soft and tender thanks to the full-cream milk and butter. The recipe adds a local twist, inspired by the thick shell that houses baobab seeds, baking the loaf inside the shell rather than in a tin. Recipe compliments of Woolworths.

Ingredients
• 500 g bread flour
• 1 tsp salt
• 1 tbsp sugar
• 1 tsp instant dry yeast
• 1 ¾ cups full-cream milk
• 50 g unsalted butter, softened
• 1 free-range egg, whisked with 1 tbsp water or milk
Method
- Put all the ingredients except the butter and egg into a mixing bowl.
- Knead in a stand mixer on low speed for 5 minutes.
- Gradually add the butter until incorporated, then knead for 5 minutes more.
- Cover the bowl with a cloth and allow the dough to prove for 1 hour.
- Place the dough in a 20 cm loaf tin and prove for 20 minutes.
- Heat the oven to 200°C.
- Brush the top of the dough with the egg wash.
- Bake for 35 minutes, or until golden.
