Meat-free Monday: Roasted butternut and sweet potato soup

This easy-to-make soup is perfect for cold weather, and you can freeze a batch for nights when you don’t feel like cooking.

Root vegetables are built for soup. Butternut, carrot and sweet potato blend into something naturally creamy and slightly sweet. This soup is also high in fibre and packed with vitamin A and C. Recipe compliments of Instant Pot.

Prep time: 15 minutes | Cook time: 30 minutes | Serves: 4

Ingredients

  • Butternut
  • Sweet potatoes
  • Carrots
  • Onion
  • Vegetable broth
  • Milk
  • Cinnamon
  • Nutmeg
  • Maple syrup or honey
  • Salt

Method

  1. Add chopped vegetables and broth to pot.
  2. Use Soup function for 30 minutes.
  3. Blend until smooth.
  4. Stir in milk and spices.
