Celebrate World Chocolate Day with these yummy tartlets

These tartlets are delicious on their own, but they also pair beautifully with whipped cream, crème fraîche, or a handful of fresh berries.

World Chocolate Day is the perfect excuse to make something a little special, and these dark chocolate and rosemary tartlets fit the occasion beautifully. Chocolate and rosemary may sound unexpected, but the herb brings out the richness of the dark chocolate without taking over. The base is buttery and crisp, while the filling is smooth, glossy, and indulgent. Finished with a small sprig of rosemary, they look lovely on any dessert table.

Ingredients

  • 200 g shortcrust pastry
  • 200 g dark chocolate
  • 150 ml cream
  • 1 tsp chopped rosemary
  • 1 tbsp butter

Method

  1. Roll out pastry and line tart tins.
  2. Bake at 180°C for 15 minutes until golden.
  3. Heat cream until just simmering.
  4. Pour over chopped chocolate and butter.
  5. Stir until smooth, then fold in rosemary.
  6. Fill tart shells and chill until set.

Tip: Chop the rosemary very finely so it blends through the ganache without giving a woody texture.
