The adage says that a mother carries a child for nine months in her belly, three years in her arms, and a lifetime in her heart.

If you are looking to make this Mother’s Day (May 8) special, why not help your mom out with the cooking? Use these three recipes as inspiration:

Simple stir-fry

Cooking time – 30 min, preparation time – 10 min. Serves 6 to 8.

Ingredients: 3T oil, 1t each spices of your choosing (cumin, masala etc.), 1/4 cup soy sauce, 1 large onion (cut into half rings), ½ cabbage (shredded), 3 carrots (julienned), a small pack of green beans (halved), 1 pack of mushrooms (chopped), 500g of your choice of protein (chicken, tofu etc.).

Directions: Heat the oil and fry the onion for a minute or two, then add the cabbage, beans and carrots. Fry for about 10 minutes before adding soy sauce and spices. Combine and move the vegetable mixture to the outer rim of the pan. In the centre of the pan (or a skottel if you are cooking outdoors), add the sliced or cubed protein and fry until brown. Combine the veggies and meat together, then add the mushrooms. Simmer until the mushrooms are soft. Serve with rice, noodles or even roti.

Chicken a la King

Cooking time – 30 min, preparation time – 10 min. Serves 6.

Ingredients: 3T oil, 1t each spices of your choosing, 1 large onion (cut into half rings), 1 pack mushrooms (chopped), 1 cup peas (frozen), 4 chicken fillets (cubed), 1t lemon juice

Sauce: 1 packet mushroom soup powder, 2T mayonnaise, 1 cup milk, 1 cup fresh cream

Directions: Heat the oil and fry the onions until cooked. Add the chicken and fry. Add the lemon juice and spices, then combine. Add the peas and simmer for five minutes. In a separate jug, combine the soup powder, milk and mayonnaise until there are no lumps. Add the sauce mixture to the chicken mixture and combine, before bringing to a boil. Add in the mushrooms and cream, and simmer for five minutes with the lid on. Serve with pasta or over rice.

Classic waffles

Cooking time – 15 min, preparation time – 10 min. Makes 10-12 waffles.

Ingredients: 2 cups flour, 1t salt, 4t baking powder, 2t white sugar, 2 eggs (beaten), 1 1/2 cups warm milk, 1 1/3 cups butter (melted), 1t vanilla extract

Directions: Pre-heat your waffle maker. Combine the flour, salt, baking powder and sugar. Add the eggs, milk, butter and vanilla to the dry ingredients and combine well. Ladle the batter into the waffle maker and cook until golden brown. Serve with syrup and ice cream.
