Makoma dreams of owning her own restaurant in Polokwane one day

Makoma is a well-known caterer, residing in Seshego, and caters for all kinds of functions: weddings, meetings, baby showers, children's parties, bridal showers, funerals and for social clubs

POLOKWANE – Makoma Malatji and her husband, Ralehlaba, are a sought-after couple who don’t really find time to go on leave.

She re-charges during the days off between functions where she caters for up to 500 guests at a time.

Makoma is a well-known caterer, residing in Seshego, and caters for all kinds of functions: weddings, meetings, baby showers, children’s parties, bridal showers, funerals and for social clubs. Growing up in Bolubedu in Kgapane, she moved to Seshego in 2009 to stay with her aunt. Here she met Ralehlaba they and got married.

He is a comedian and sought after as a master of ceremonies. He also assists her with preparation of food.

“I am a self-taught chef who loves preparing food and coming up with new ideas,” she said, adding that she is doing well, as there was always a need for food. Most of all she loves catering for weddings, as she loves preparing food with flair and style.

She has equipment, cutlery and dishes to cater for large functions.

She discusses the menu before the function with a person and agree on the menu and for how many guests catering should be done. If she does not have a special event or events booked and lined up, she can also supply food on short notice, and she delivers it to clients.

Except for the catering business she also bottles chillies, which she then sells.

For relaxation she and her husband like going to watch a good movie or chill with friends. “We work very hard, though, as Ralehlaba often is the master of ceremonies at functions I cater for, or performs as a comedian.”

She mostly prepares African traditional food such as trotters, chicken feet, dumplings and mopani worms, but can also prepare a pizza to die for. She prepares her own base and add ingredients such as chicken livers, bacon, olives berry tomatoes and parsley.

She shared a recipe for preparing tongue with our readers. The tongue must be marinated for at least 30 minutes or overnight using spices of your choice, wrapped in plastic.

  • Cook the tongue for an hour and a half and remove the outer tough skin.
  • Cut the tongue, butterfly-wise, but do not divide totally.
  • Fill the tongue with cooked vegetables such as caramelised onions, finely cut carrots, chillies, peppers and whatever you want to, such as feta cheese and spinach, close up using cocktail and put in a pre-heated oven for 20 minutes to half an hour.
  • Cut and serve while hot.
