#WFD- Rice Balls with Mozzarella and Basil

Serve hot and garnish with fresh basil.

POLOKWANE – Vegetarian food shouldn’t be seen as boring as there are many different recipes that include interesting and delicious combinations.

The following recipe supplied by What’s for Dinner includes Mozzarella and Basil to provide you with a scrumptious meal that is nutritious and delicious.

Ingredients

  1. 30ml olive oil
  2. 1 x onion, finely chopped
  3. 1 x clove garlic, crushed
  4. 0.5 x red pepper, diced
  5. 250ml arborio rice, washed
  6. 1 x KNORR Creamy Garlic and Herb Potato Bake
  7. 700ml hot water
  8. 100ml white wine
  9. 75g mozzarella cheese
  10. oil (for deep frying)
  11. fresh basil to garnish

Method

  1. Heat the olive oil and fry the onion and garlic until soft.
  2. Add the pepper and rice to the pan and cook for 3 min stirring to coat the rice in oil.
  3. Mix the KNORR Garlic & Herb Potato Bake packet with the water and the wine and add to the pan a little at a time, waiting for the liquid to be absorbed by the rice before adding the next ladleful of liquid.
  4. Once all the liquid has been absorbed and the rice is tender, remove the pan from the heat and leave until the mixture is cool enough to handle.
  5. Cut the cheese into 12 blocks, then, taking about a tablespoon of risotto, shape the mixture around the cheese pieces to make 12 balls.
  6. Heat the oil and fry the risotto balls in batches until golden.
