Snack on Annatjie’s tasty platters

Annatjie Joubert has prepared platters for as long as she can remember, but only recently started earning an extra income with it.

POLOKWANE – After the ups-and-downs of the year, cooking up a storm and preparing delicious Christmas platters might be the last thing you’d want to do.

Leave that job for Annatjie Joubert of Libra 6 Catering, who has been preparing platters for as long as she can remember. About four years ago, Annatjie decided to make a little extra money with her craft and Review spoke to her to find out what type of platters there are.

“I ask the client what they like and prefer and then I come up with ideas to pitch to them. The preferred platter depends on the time of day and the type of people that will snack on them. Women tend to prefer more healthy options while men love the meat option.”

There is a big variety of platters to choose from such as sweet, salt, vegetarian, cheese and even pastry platters. You can also opt for a gluten free, vegetable, bread platters or meat platter, based on your dietary preferences.

“We usually work on six to eight portions per person and I’ve noticed people eat more in the late afternoon. A platter can be a very balanced meal as it can cover all the food groups. I also put in lettuce, tomatoes and cheese on the platter, not only for colour, but also because it makes the platter look nice.”

Orders should be placed at least two days before the platter is required, to ensure that Annatjie has enough time to prepare everything as she makes everything from scratch.

“I also prepare cooked meals such as lasagne and pies that can be frozen. I love trying new variations and experimenting with the food,” she added.
