POLOKWANE – Pasta is one of the world’s most favourite foods. Spaghetti, lasagne, rotini and tortellini; there are over 600 known pasta shapes.

Pasta is delicious, nutritious and versatile. It can be enjoyed as a main course or as a side dish. Top it with your favourite sauce and you are ready to enjoy a meal.

Friday, October 25 is World Pasta Day and it is celebrated in the form of events and promotional initiatives in different countries.

The objective of World Pasta Day is to draw the attention of the media and consumers to pasta.

In commemoration of this day, Review spoke to chef Raymond Modiba from Bolivia Lodge.

Raymond has been a chef since 1994 and started at the Pietersburg Club.

He obtained his diploma in catering at the Mabopane Technical College in 1998. In 2007 he started at Bolivia Lodge.

“The secret about cooking pasta is not to cook it for long. Do not a lot of spices and unnecessary sauces in your food because that will make you lose the original taste. Just add salt and mixed herbs,” says Raymond.

He prepared three delicious pasta dishes: Lips Picoli pasta sauce with olives, tomatoes, onions, garlic on a bed of penne pasta, Lips Bolognese: mince on a bed of spaghetti and Ray Alfredo: bacon, ham and mushroom sauce on a bed of Fettuccine pasta.

“Cooking has always been my passion. I love and enjoy it very much. I grew up cooking at home. Being the eldest, I was always cooking for my younger brother and sisters,” he says.

Raymond shares his easy to make favourite Lips Bolognese recipe:

1. Cook the spaghetti in plenty of boiling water until soft and tender. Drain the water when cooked and keep warm.

2. Heat oil in a sauce pan and fry onion and garlic until soft. Add the mince and stir until brown.

3. Stir in the beef stock, tomatoes, tomato puree and sugar. Season to taste and leave to simmer for about 15 minutes until the mince is tender and the sauce thickens slightly. Stir in chopped basil and place a generous spoonful on top of drained pasta for each serving.
