Rainy day comfort food leads to bliss

POLOKWANE- The rainy weather is slowly but surely bringing with it the winter season.
People do not want to leave their homes anymore, instead they want to stay in and keep dry and warm.
Chef Davis Sebopa from Bolivia Lodge shared his recipe for a dish that keeps him warm on wet, cold days: delicious, comforting soup and bread.
Davis started working in the kitchen at Oasis Lodge in 2002 as an assisted kitchen chef. “I had always loved cooking, it has been my passion from a young age. That is why I chose to study hospitality at school.
“I started studying hospitality at the Le-bowakgomo Commercial College, then went to the Kremlin College to finish my diploma.
“After completing my diploma course, I did my practicals at MG Getaway where I learned a lot about cooking and working with food,” he said.
“In 2005 I moved from Oasis Lodge to Limpopo Guest Manor as kitchen manager. A kitchen manager oversees the kitchen and controls stock. It was challenging, but I learned a lot there.”
Davis said he started working at Bolovia Lodge in 2006 and never looked back.
Davis’ bean and bacon soup:
Ingredients:
• Sugar beans;
• Bacon;
• Butter;
• Salt and pepper for taste;
• Fresh cream, and
• Water.
Method
1. Mix the sugar beans and bacon together and cook until the beans are tender.
2. Add salt and pepper to taste.
3. Crush the sugar beans and add butter and fresh cream.
4. Cook all the way through.
5. Serve with home made bread and garnish with parsley.
