POLOKWANE – In summer the tendency is to move away from heavier foods in search of something light and refreshing. With beautiful summer fruit now coming into season, it is also the perfect time for fruit platters, fresh fruit juices and sorbets.

Sorbet is a frozen dessert made from sweetened water with added flavouring, usually from fruit juice or fruit purée. Sorbets are easy and quick to make, usually with ingredients you might already have in your home.

Here is is a quick recipe to try at home which promises to be a hit with both adults and kids:

Berry sorbet

Ingredients

1-3/4 cup of water

1-3/4 cup of sugar

2 cups raspberries

2 cups strawberries

(Note: you can use any type of berry)

1 to 1/2 cup of cherry juice

(Note: 100% purée cherry juice would work the best)

1/2 cup of fresh lime juice

2 tablespoons fresh orange juice

Method

1. Mix the sugar and the water in a large pot and dissolve until the sugar has dissolved completely.

2. Once the sugar has dissolved, add the berries and cook for 10 minutes.

3. After 10 minutes, strain the fruit in a strainer or a sieve. Make sure you get the juice only. Refrigerate the juice and throw the pulp away.

4. Once the juice has cooled, stir in the cherry, lime and orange juice.

5. Pour into an air tight container and place in the freezer. Whisk the mixture every 20 minutes for the first two hours to get the sorbet smooth and then freeze until solid.

6. Serve with fresh fruit.
