“Champagne is about food, company, and setting, but also about diversity and innovation,” said Miguel Chan, Southern Sun’s Group sommelier, who has led the hotel’s champagne journey since 2014.

He added that this year’s 2025 vintage has been hailed as one of the best in 50 years.

Chan highlighted how climate change has influenced viticulture and even the evolution of glassware, now designed to better express the fruit and complexity of the wine.

Guests enjoyed a refined menu curated by the hotel’s chefs, from smoked salmon and goat’s cheese canapés to duck marmalade brioche and chocolate-strawberry desserts.
