Loadshedding Survival Kit – Dinner in the dark?
TAKE note of this power-free meal idea. (Serves 2)
- 2 cans of mixed beans, rinsed
- 1 bunch of chopped spring onions
- 1 red pepper
- 4 chopped gherkins
- 1 handful of capers
- 2 cans of tuna in salt, drained
- 1 dash of fresh dill
- 1 drizzle white balsamic vinegar
- 1 drizzle olive oil
- Drain and rinse mixed beans
- Add spring onions, peppers, gherkin, capers and tuna
- Add dill and dress with white vinegar and olive oil.
