RECIPE: Greek Shortbread – with only 4 ingredients
Once you've tried these you just won't be able to stop!
This recipe is so quick and easy to make – enjoy them as they are, or add in a few almond niblets and bake a batch for Christmas gifts. Zhoosh them up by dipping one end into melted chocolate, or decorate with a cherry and some green sprinkles, or get creative with silver and gold dust (the edible kind)…
Here’s what you need:
- 1 C butter (227g)
- 1 C icing sugar
- 1/2 C oil
- 2-3 C flour
Here’s how it’s done:
- Mix butter and oil.
- Add sifted icing sugar.
- Mix in 2 C flour, slowly adding more until mixture comes away from sides of bowl, forming a soft ball.
- Roll into small balls and flatten slightly on a lightly greased baking tray.
- Bake at 180 degrees for 12-15 minutes till golden.
- Cool on rack.
- Store in airtight container.
