Warm up with a hearty oxtail meal

The perfect winter oxtail meal

There is nothing more delicious than a warm, rich oxtail stew or curry, depending on your preference.

This dish is perfect for winter and will fill you with that warm feeling we all crave during the cold months.

Here is a simple recipe for you to indulge in:

Ingredients:
Oxtail

Celery

Carrots

Corn on the cob (diced)

Green beans

Baby marrows

Beef or chicken stock

Beef or oxtail soup sachets

(Quantity of ingredients to your preference)

Method:
• Start by seasoning the oxtail with spices of your choice, like salt and pepper and a meat spice.

• Coat it in flour or coat it with packet soup powder.

• Fry/sear the oxtail. Once nicely browned, set aside. In the same pot, fry your chunky-chopped onions with the celery, green peppers and fresh garlic for about two minutes.

• Add a pinch of smoked paprika to intensify the flavour, season well but not too much or it will be salty.

• Add the oxtail to the pot, stir for one minute then add boiling water to cover the meat.

• Then add whatever stock cubes, or veggie or beef stock you have chosen.

• Put the lid on and leave to simmer for about 2 hours.

• After that, add the corn and carrots, and any other veggies of your choice. Cook until meat is tender and gravy has thickened.

• Serve on a bed of creamy mash or fresh homemade bread.
