Lamingtons have been around for decades, with tried-and-tested family recipes often passed from generation to generation. When it comes to making the perfect lamington, you’ll need a few key ingredients and a little helper – so get your child to help you! Best of all, this lamington recipe needs only a handful of ingredients, which you probably already have in your kitchen pantry. Read on to find out how to make these lamingtons.
Ingredients:
- 125g butter
- 125ml castor sugar
- 5ml vanilla essence
- 2 eggs
- 375ml (1½ cups) flour
- 7ml (1½ teaspoons) baking powder
- 50ml milk
- 100g chocolate, chopped
- 50ml water
- 50ml sugar
- 150g desiccated coconut
Method:
1. Cream the butter and sugar together until light and fluffy. Add eggs and mix well. Fold in the flour and baking powder and then add the milk. Pour into a 20cm square baking pan and bake at 180°C for 30 minutes.
2. Remove from the oven and cool completely.
3. Meanwhile in a medium-sized mixing bowl, mix the chocolate, water, and sugar. Microwave on defrost setting for 1 -2 minutes until smooth and melted together.
4. Cut cooled cake into squares and dip them quickly into the chocolate mixture and then into the coconut.
