Thirty-minute meals: one pan Caprese pasta

It’s Monday again, which means it’s a meat-free day.

The great thing about this meal is that it is made in less than 30 minutes and in one pan, which means fewer dishes to do.

You will need:
* Half a cup diced onion.
* One tablespoon olive oil.
* Two and a half cups dry pasta.
* One packet of cherry tomatoes, sliced in half.
* Five fresh whole basil leaves.
* Two teaspoons minced garlic.
* Two and a half cups water.
* Half a teaspoon salt.
* Half a teaspoon fresh cracked black pepper.
* One and a half cups fresh, diced Mozzarella cheese.
* Two tablespoons balsamic vinegar.
* Chopped basil leaves for garnish.

What to do:
Preheat a large pan with one tablespoon olive oil over medium heat. Add onions and cook until soft.
Add dry pasta, sliced tomatoes, fresh whole basil leaves, garlic, water, salt and pepper. Stir together to combine.
Bring pasta mixture to a boil. Continue to cook pasta over medium heat, stirring often, until pasta is cooked and the liquid is reduced; about 10 minutes.
Top evenly with mozzarella cubes and cover the pan so the cheese can melt.
Sprinkle with balsamic vinegar and chopped basil for garnish. Serve hot.
