It’s very economical, and the recipe uses ingredients that you normally have on hand in the cupboard and fridge.
“Marie biscuit fridge cake is a lifesaver when you have to make something on the run, but during lockdown it can be easily made with the children on hand to put it together.
“It’s also perfect for bake sales, baker’s day and children’s parties or just to have on hand for when hubby is poking around the pantry, looking for something to satisfy his sweet tooth,” said Chantelle du Plessis, public relations officer for Hirsch’s Meadowdale.

Marie Biscuit fridge cake:
Makes 16 to 24 squares.
Ingredients:
• 1 packet of Marie biscuits
• 125g butter or hard margarine (125 ml)
• 260g icing sugar (500 ml)
• 15ml cocoa
• 1 large egg, beaten
• 5ml vanilla essence
Method:
• Break biscuits into the bowl of a food processor which has been fitted with a double-knife stainless-steel blade.
• Process until fine.
• Melt butter or margarine in a saucepan over a moderate heat.
• Sift icing sugar and cocoa together, and stir into melted butter or margarine.
• Stir in the egg and vanilla essence quickly.
• Lastly add in the Marie biscuit crumbs and mix well.
• Press into a greased 22cm to 24cm square container.
• Place in the refrigerator to set.
• Cut into squares and serve.
Tip:
• Double the recipe for a larger yield when catering for a crowd.
