Thirty-minute meals: sweet potato, chicken and bacon bake

Is there anything better than a healthy, mid-week meal that can be made in 30 minutes or less?

This Banting recipe is sure to satisfy your family’s taste buds tonight.

You will need:
* Three sweet potatoes.
* Olive oil.
* One packet of bacon.
* Two skinless, boneless chicken breasts cut into cubes.
* Two cups grated cheese.

What to do:
Slice the sweet potatoes into round “chips”. Put into a greased roasting dish with about two tablespoons olive oil. Roast at 180 degrees Celsius for 20 minutes.
While the potatoes are roasting, fry the bacon and cubed chicken.
Place chicken and bacon on top of several sweet potato chips, top with cheese and place briefly under grill to melt the cheese.
Dish up and serve hot.
