Recipe compliments of Instant Pot South Africa.

Ingredients

  • 80 ml Coconut oil
  • 80ml Peanut Butter
  • 60ml Honey or maple syrup
  • 1 Cup Rolled Oats
  • 100g Seed and nut mix, we used a mixture of sunflower, pumpkin, chia and cashews
  • 1 tsp ground cinnamon
  • Optional: 100g Dried cranberries
  • 50g Melted chocolate to drizzle over the bars

Method

  1. Set Vortex ClearCook to Bake at 160ºC for 8 minutes.
  2. Line a 20 x 16 cm cake tin with baking paper and grease it with butter. Melt Coconut oil, peanut butter and honey together.
  3. In a medium sized bowl, combine the oats, seed and nut mixture, cinnamon and cranberries (if using). Make a well in the centre of the bowl, add your wet ingredients and stir until the mixture is evenly coated.
  4. Place granola mixture into your greased tin and press down firmly until it is compact.
  5. Bake in the Vortex ClearCook for 8 minutes, until the granola is golden. Allow the Granola to cool completely in the fridge for 30 minutes before cutting into bars. Drizzle with melted chocolate if desired.

Store granola bars in an airtight container in the fridge for up to a week, or freeze them for up to a month.
