Embrace meat-free Monday with a nutritious three-bean salad

This three-bean salad can be served as a refreshing side dish or as a main course for a lunch or light dinner

Meat-free Mondays are an excellent opportunity to explore the diversity and deliciousness of plant-based meals, and what better way to do so than with a vibrant and nutritious three-bean salad? Beans are a powerhouse of nutrition, packed with protein, fibre, vitamins, and mineral. Recipe compliments of Harvestime.

Ingredients

  • 300g Harvestime Green Beans
  • 1 Can red kidney beans
  • 1 Can butter beans
  • ¼  Red onion (finely chopped)
  • 3 TBSP white wine vinegar
  • 3 TBSP Sweet chilli sauce
  • Salt and pepper
  • 1 tsp Red chilli flakes (optional)
  • Parsley (finely chopped)

Method

  1. Prepare the Harvestime Green Beans as per cooking instructions. Set aside and cool.
  2. In a large bowl, drain and add the red kidney beans and butter beans. To that, add the green beans and red onion.
  3. In a small separate bowl, add the white wine vinegar, sweet chilli, pepper flakes, salt and pepper and stir until combined.
  4. Add this mixture to the dish with the beans and stir gently until combined.
  5. Sprinkle the parsley over the salad and enjoy.
