Pomegranate vodka cocktail with beetroot garnish

Candy-striped beetroot, green apple, and ribbons of celery turn a simple jug cocktail into a proper centrepiece.

This pomegranate cocktail combines vodka, lemon juice, and pomegranate rubies, finished with pretty slices of beetroot, apple, and celery for a fresh party pour. Recipe compliments of Woolworths.

Ingredients

• 4 cups pomegranate juice
• 1 cup good quality vodka
• 1 baby or candy-striped beetroot, peeled and thinly sliced into rounds
• Juice of 2 lemons
• 2 Granny Smith apples, thinly sliced into rounds
• Celery stalks, shaved lengthways using a vegetable peeler
• 175 g pomegranate rubies
• Crushed ice, to serve

Method

  1. Combine the pomegranate juice, vodka, and lemon juice in a large jug and stir well.
  2. Layer the beetroot, apple slices, and celery ribbons in a separate jug.
  3. Pour over the pomegranate cocktail and add the pomegranate rubies.
  4. Fill six glasses with crushed ice.
  5. Pour in the cocktail and add a few slices of beetroot, apple, and celery to each glass.
  6. Serve straight away.
