Fragrant lentil and rice biryani made in minutes

Lentil and rice biryani is a fragrant, protein-rich vegetarian dish that is easy to make and perfect on its own or served with a side salad.

Biryani usually takes a long time to cook, but this version keeps the layered flavour while skipping the hours. The Instant Pot locks in the spices, steams the rice evenly and delivers tender lentils with just enough bite. Recipe compliments of Instant Pot.

Prep time: 15 minutes | Cook time: 10 minutes | Serves: 4

Ingredients

  • 1 cup lentils, soaked
  • 2 cups rice
  • 2 cups vegetable stock
  • ½ onion, chopped
  • 1 tomato, chopped
  • Oil for sautéing

Spices:

  • Mustard seeds
  • Onion powder
  • Garlic
  • Ginger
  • Bay leaf
  • Turmeric
  • Paprika
  • Cumin
  • Garam masala
  • Cinnamon
  • Salt and pepper

Method

  1. Sauté onion and first batch spices.
  2. Add second batch spices and tomato.
  3. Deglaze.
  4. Add lentils and rice, then stock. Do not stir.
  5. Pressure Cook 10 minutes. Quick Release.
  6. Fluff and serve.
