Thai green curry vegan soup with tofu is a vibrant, nourishing dish that combines the bold flavours of traditional Thai cuisine with wholesome plant-based ingredients. The foundation of this soup is a blend of green chillies, garlic, lemongrass, ginger, and herbs. When simmered with creamy coconut milk, the curry develops a flavour profile that is mildly spicy, slightly sweet, and wonderfully aromatic. The addition of fresh lime juice enhances the broth with a bright citrus note that complements the richness of the coconut milk. Firm tofu serves as the primary source of plant-based protein, while fresh vegetables such as broccoli, edamame, peas, and bell peppers add colour and crunch.

Ingredients

For the soup:

  • 1 tablespoon coconut oil
  • 2 tablespoons Thai green curry paste
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 4 cups vegetable broth
  • 1 can (400ml) full-fat coconut milk
  • 250g firm tofu, pressed and cubed
  • 2 cups broccoli florets
  • 1 cup shelled edamame
  • 1 cup green peas
  • 1 red chili, thinly sliced (optional)
  • 1 tablespoon soy sauce or tamari
  • 1 tablespoon maple syrup or brown sugar
  • Juice of 1 lime
  • Salt and black pepper to taste

For garnish:

  • Fresh basil leaves
  • Fresh cilantro leaves
  • Lime wedges
  • Sliced red chili
  • Extra edamame or peas

Method

  1. Heat the coconut oil in a large soup pot over medium heat.
  2. Add the onion and sauté for 3–4 minutes until softened.
  3. Stir in the garlic, ginger, and Thai green curry paste. Cook for 1–2 minutes until fragrant.
  4. Pour in the vegetable broth and coconut milk, stirring well to combine. Bring the mixture to a gentle simmer.
  5. Add the tofu cubes, broccoli florets, edamame, and peas. Simmer for 10–15 minutes, or until the vegetables are tender.
  6. Stir in the soy sauce, maple syrup, sliced chilli (if using), and lime juice. Taste and adjust seasoning with salt and black pepper as needed.
  7. Ladle the soup into serving bowls and garnish with fresh basil, cilantro, lime wedges, and extra chilli slices.
