Thirty-minute meals: cauliflower cakes

Not only is this meal quick to make but it is also perfect for those following the Banting diet.

These cauliflower cakes taste just like potato patties and are low carb.

You will need:
* One small head cauliflower.
* Two eggs.
* A quarter cup chopped onions.
* A quarter cup chopped parsley.
* Half a cup grated Parmesan cheese.
* Salt to taste
* Olive oil for frying.

What to do:
Start by removing the leaves and any green stems from the cauliflower. Place the cauliflower in a large pot of boiling water. Boil until it is soft.
Blend the cauliflower.
In a bowl, combine the eggs, onions, cheese and parsley. Add the blended cauliflower and mix.
Heat a bit of olive oil in a large non-stick pan. Add a few heaped spoonful’s of the cauliflower mixture.
Fry until both sides are golden brown.
Place the cauliflower cakes on paper towels to drain the excess oil. Add salt to taste.
