15-minute prawn, mushroom and coriander salad

White button mushrooms bring an earthiness and umami flavour to the salad and complements the prawns and noodles.

This prawn, mushroom and coriander salad is super speedy to whip up, literally only taking 15 minutes from start to finish. It makes for a great midweek meal. Recipe compliments of South African Mushroom Farmers’ Association.
