Chicken Kiev, pea mash and garlic butter Tenderstem broccoli

Garlic butter Tenderstem broccoli steals the show, adding a fresh crunch to this comforting Chicken Kiev and sweet pea mash combo.

Get ready to savoury a classic dinner recipe with a twist: crispy, golden Chicken Kiev oozing with garlic butter, served alongside a velvety sweet pea mash and perfectly seasoned, garlic-buttered Tenderstem broccoli. This dish combines comforting flavours with a vibrant green touch, making each bite a satisfying balance of crunch, creaminess, and fresh, garlicky goodness. Recipe compliments of chef Itumeleng Khasoane from MATHS Restaurant.

Ingredients

  • 100g butter
  • 3 garlic cloves, minced
  • 50g parsley, chopped
  • 50g rosemary, chopped
  • Salt and pepper
  • 2 chicken breasts
  • 75g flour
  • 2 eggs, beaten
  • 100g panko breadcrumbs
  • Vegetable oil, for frying
  • 250g Tenderstem broccoli
  • 50g herb butter
  • ½ a lemon
  • 400g potatoes
  • 125g sweet peas

 

Method

  1. Mix butter, garlic and herbs then season with salt and pepper.
  2. Cut a pocket into each breast and fill with the garlic butter. Seal the pocket.
  3. Coat the chicken in flour, then dip in beaten eggs and finally coat with panko breadcrumbs.
  4. Fry the chicken for 10-12 minutes until golden brown and cooked through.
  5. Blanch the Tenderstem broccoli for 2 minutes until tender.
  6. In a pan melt butter and sauté the garlic until fragrant.
  7. Toss in broccoli and add a squeeze of lemon.
  8. Boil potatoes in seasoned water until soft; in a different pot, blanch sweet peas, then cool in a bowl of ice-cold water.
  9. Mash potatoes to desired consistency, add butter to combine and add sweet peas to mashed potatoes.
  10. Blanch Tenderstem broccoli for 2 minutes, transfer to an ice bath.
  11. In a pan, melt herbed butter then sauté Tenderstem broccoli.
  12. Once all the components of the dish are ready, on your plate first dish your sweet pea mash potato into a design of your choice.
  13. Diagonally slice the chicken breast, place on the mashed potato.
  14. Finish off with your beautiful Tenderstem broccoli.
