Treat the family with a freshly baked Laager Rooibos and berry loaf

This loaf smells amazing straight out of the oven and tastes even better the next day (if it lasts that long).

This berry Rooibos loaf is soft and fruity. The secret to this loaf’s rich flavour lies in the tea. Made using Laager Tea4Kidz Strawberry and Apple & Berry Rooibos teabags, the tea infuses the dried fruit and dates with natural sweetness and a gentle berry aroma. Soaking the fruit in warm rooibos for at least 30 minutes (longer if you have time) helps soften the fruit and draw out the full flavour of the tea. Recipe compliments of Joekels.

Method

  1. Soak the tea bags and the dried fruit and dates for 30 minutes to 3 hours.
  2. Combine all dry ingredients.
  3. Combine wet ingredients.
  4. Mix all wet and dry ingredients together.
  5. Use butter or baking spray before placing the mixture in a bread tin and bake on 180 °C for 50 mins.
  6. Use a fork to check if it’s done. When the fork is clean after sticking into the bread, you can take it out and enjoy!
