Fresh and fizzy pomegranate-ginger Mimosa

Wind down winter with a drink that’s fresh enough to feel like spring’s on the way, but still has that warm, spiced edge.

If you’re caught between wanting something fresh and fizzy but not quite ready to dive headfirst into full-on summer cocktail, pomegranate-ginger Mimosa is for you. It’s got that winter warmth from ginger, the bold tartness of pomegranate, and a cheeky bit of sparkle to bring it all together.

Ingredients

  • 60ml pomegranate juice (fresh or bottled)
  • 15ml ginger syrup (store-bought or homemade*)
  • 90ml chilled Prosecco or sparkling wine
  • Ice cubes or crushed ice
  • Fresh pomegranate seeds or wedge (for garnish)
  • Small sprig of rosemary (for garnish)

Method

  • Fill a glass with a few ice cubes or crushed ice.
  • Pour in the pomegranate juice and ginger syrup.
  • Top with chilled Prosecco or sparkling wine.
  • Stir gently to combine.
  • Garnish with a wedge or cluster of fresh pomegranate and a rosemary sprig.

Tips:

  • To make your own ginger syrup, simmer equal parts sugar and water with fresh sliced ginger for 10–15 minutes. Let it cool, strain, and store in the fridge.
  • Mocktail Version: Use sparkling water or ginger beer instead of Prosecco for a non-alcoholic twist.
