Ingredients

  • 120ml white rum
  • 100ml coconut cream
  • 150ml pineapple juice
  • 1 tablespoon fresh lime juice
  • Ice cubes
  • 1 small fresh coconut, halved and hollowed
  • Pineapple slices and mint leaves, to garnish

Method

  1. Add the rum, coconut cream, pineapple juice, lime juice, and a handful of ice to a blender.
  2. Blend until creamy and frothy.
  3. Pour the mixture into hollowed-out coconut shells.
  4. Add a pineapple wedge and a sprig of mint for the perfect finish.
