Green goddess chicken wraps with lettuce and cucumber

Simple, fresh and full of flavour, these Green Goddess Chicken Wraps are an effortless answer to warm-weather dining. Crisp gem lettuce, crunchy cucumber and tender chicken are tied together by a herby, creamy dressing that feels gourmet yet light enough for summer. Whether packed for a picnic or served straight from the kitchen, they deliver that easy balance of freshness and tastiness that everyone loves.

Ingredients

For the roasted chicken: (or use a medium size rotisserie chicken, deboned)

  • 4 chicken breasts on the bone, skin on
  • olive oil, for drizzling
  • salt & pepper, to taste

For the green goddess mayo dressing:

  • ½ – ¾ cup mayonnaise
  • ½ cup plain double cream yoghurt
  • 1-2 Tbsp lemon juice
  • 1 anchovy fillet (optional)
  • about 1 cup fresh green herbs (parsley/chives/dill)
  • salt & pepper, to taste

For assembling:

  • 6 large tortilla wraps
  • ½ cucumber, thinly sliced
  • a small bunch crispy lettuce
  • a small bunch wild rocket leaves

Method

  1. Prepare the chicken: Preheat the oven to 200°C. On a baking tray lined with baking paper or foil, arrange the chicken, skin-side up. Drizzle with oil and season with salt & pepper, then roast for about 20 minutes until the chicken is just cooked. Allow to cool for 15 minutes, then remove the bones and slice thinly.
  2. Prepare the dressing: In a blender or food processor, add all the ingredients for the green goddess mayo dressing. Blend until smooth, then taste and adjust seasoning if needed. Set aside.
  3. Assemble: Warm the wraps briefly in a hot pan, then arrange the filling in the centre of each: sliced chicken generously drizzled with the green goddess dressing, topped with sliced cucumber, crunchy lettuce and rocket. Fold to close the wraps, then slice each in half. Serve at room temperature.
