Exotic tomato salad with fior di latte and mustard vinaigrette

While a classic Italian Caprese is hard to beat, this version by Spier gets a subtle French twist with a wholegrain mustard and honey vinaigrette, turning simple ingredients into something that pairs well with our coastal-influenced Signature Sauvignon Blanc. Brimming with bright tropical notes and refreshing acidity, this pairing is like two peas in a pod (or two tomatoes in a caprese?).
Both wine and dish share the same sunny spirit – fresh, lively and perfect for warm days. It’s uncomplicated food and wine at their best, whether for a long summer lunch or a quick, delicious midweek meal.
Ingredients
- About 600g exotic tomatoes, sliced whichever way you prefer
- 250 – 375g fior di latte (2-3 balls fresh mozzarella)
- A handful fresh basil leaves
- 6 Tbsp extra virgin olive oil
- 3 Tbsp apple cider vinegar
- 2 Tbsp wholegrain mustard
- 1-2 Tbsp honey
- salt & pepper, to taste
Method
- On a large, wide salad platter, arrange the tomatoes, fior di latte and basil leaves.
- In a medium-sized jar with a lid, add the oil, vinegar, mustard, and honey and season with salt & pepper.
- Shake the vinaigrette well, then drizzle it over the salad right before serving.
- Serve the remaining dressing on the side, with more salt & pepper so everyone can help themselves.
