Watermelon, pineapple and dragon fruit cocktail

The mix of watermelon, pineapple and dragon fruit brings natural sweetness while the rum gives it a smooth kick.

This tropical fruit cooler is an easy summer cocktail. You can prep the fruit ahead of time, which helps when you are hosting a large crowd. Once you pour the cocktail mix over the top, the fruit floats and shifts, which gives it a layered look.

Ingredients

  • 250 ml light rum
  • 350 ml coconut water
  • 60 ml lime juice
  • 30 ml grenadine
  • 1 cup watermelon cut into thin sticks
  • 1 cup pineapple chunks
  • 1 cup dragon fruit slices
  • Mint leaves for serving
  • Ice

Method

1. Fill each glass with ice. Add a mix of watermelon, pineapple and dragon fruit. Let a few pieces stand tall so they show above the rim.
2. Pour the grenadine into the bottom of each glass and let it settle. It will sit at the base and give a soft pink layer.
3. Mix the rum, coconut water and lime juice in a jug. Stir until everything blends.
4. Pour the mixture over the fruit-filled glasses. Let the fruit float and shift naturally. Finish with a sprig of mint and serve while cold.
