Stewed sweet potatoes with orange zest

Soetpatat sits right in the heart of Afrikaans home cooking, and it has been turning up on South African tables for generations.

Soetpatat is a South African sweet potato side dish baked with butter, brown sugar, cinnamon, and orange zest until sticky, golden, and caramelised. It goes well with braaied fish or roast meat. Recipe compliments of Woolworths.

Prep: 15 to 20 mins | Cook: 45 to 50 mins | Serves: Six

Ingredients

• 1 kg sweet potatoes, peeled if you like, cut into chunks or rounds
• 200 g brown sugar, muscovado works well
• ½ tsp salt
• Freshly ground black pepper, to taste
• ½ tsp ground cinnamon
• 100 g butter, cubed
• 125 to 180 ml hot water
• Zest of ½ orange

Method

  1. Heat the oven to 180°C.
  2. Arrange the sweet potatoes in a single layer in a large casserole dish.
  3. Sprinkle over the brown sugar, salt, pepper, and cinnamon.
  4. Dot the butter over the top, then pour the hot water into the dish.
  5. Scatter over the orange zest and cover the dish with foil.
  6. Bake for 30 minutes.
  7. Remove the foil and increase the oven to 200°C.
  8. Bake for 15 to 20 minutes more, until sticky and golden.
  9. Serve warm.
