Bespoke baker Kerry

Kerry Hedges is one of a select few on the Dolphin Coast who have perfected the art of bespoke baking

Maddening aromas of vanilla, nutmeg and cinnamon surround Kerry Hedges as she flits around her canary-yellow kitchen.

She bends over a hot tray of pink macaroons and pipes out raspberry-flavoured icing, carefully sandwiching them together.
“I have wanted to bake since I was little. When I was younger we did not buy sweets, cake and candy, we made it. There was always something in our oven and this is where I developed a love for baking.”
Kerry is one of a select few on the Dolphin Coast who have perfected the art of bespoke baking – the specialised craft of turning ordinary cakes and cupcakes into edible works of art.
She studied photography and graphic design in Stellenbosch and incorporates this into her Lemon Canary Bakery, a quaint bespoke bakery at the Litchi Orchard in Salt Rock.
When she is not conjuring up delicious sweet treats Kerry styles cakes and crockery for photo shoots.
“I love creative freedom in the kitchen and I put my emphasis on flavour, so all my ingredients are seasonal from the farms in KZN. I use locally grown fruit, nuts, honey, flowers and jams. Every cake I make is different and something special.
Although Kerry is happy at the Orchard she would love to open her own bakery one day.
“I would love to grow with the Orchard as there are exciting plans ahead and I would love a larger, more prominent spot but being among the trees and the farm vibe is just up my street!”
“As long as my cakes are quirky and out of the ordinary I am in my happy place!”
