A must taste experience: Haute Cabrière Pop-Up at Zimbali
Chefs Nic van Wyk and Westley Muller have joined forces with Franschhoek’s Haute Cabrière wine estate for the second season tour through SA.
Spoil yourself and your taste buds with an unforgettable fine dining experience at the exclusive Haute Cabrière Pop-Up Restaurants at Fairmont Zimbali Resort.
Chefs Nic van Wyk and Westley Muller have joined forces with Franschhoek’s Haute Cabrière wine estate for the second season tour through South Africa and they are stopping in Ballito.
The first pop-up dinner will be taking place at the OSA Restaurant at Fairmont Zimbali Resort on July 7 and 13, while Zimbali Lodge will be hosting additional pop-up experiences from July 10 – 12.

During this tour, diners can look forward to a six-course tasting menu, each course paired with a different wine to create a unique taste experience.
Think creamy rosemary and bay leaf venison ragout with soft parmesan polenta and bone marrow foam paired with Haute Cabrière Pinot Noir Reserve.
Your sweet tooth will be dazzled with their stunning dessert: a chocolate torte with amaretti crumbs, candied pecan nuts and salted caramel popcorn accompanied by a glass of Pierre Jourdan Ratafia.

Fairmont Zimbali Resort general manager Nils Rothbarth said they were thrilled to be hosting the pop-up restaurants again.
“Due to popular demand, this year we have also introduced the Sunday roast and cooking class events,” said Rothbarth.
Fairmont Zimbali Resort and Zimbali Lodge will be hosting the following events:
- July 7 and 13: six-course Indian inspired tasting menu at OSA Restaurant, Fairmont Zimbali Resort (R595 per person, wine included).
- July 8: Sunday Feast menu at OSA Restaurant, Fairmont Zimbali Resort (R395 per person. Three course meal paired with wine)
- July 10, 11 and 12: six-course Haute Cabrière tasting menu at Thandi Restaurant, Zimbali Lodge (R595 per person, wine included).
- July 11: Cooking class with Chef Nic van Wyk, Zimbali Lodge (R395 per person. Cooking demo followed by a light lunch paired with wine).
- July 15: Sunday Feast menu at Thandi Restaurant, Zimbali Lodge (R395 per person. Three course meal paired with wine).
