FATHER’S DAY: Whip up a delicious dinner for Dad

Go the extra mile this Father's Day, with this authentic mutton curry recipe courtesy of the Newcastle Advertiser team.

The way to a father’s heart is through his stomach.

While some might disagree on the anatomical accuracy of this adage, preparing a meal is sure to impress your father (or grandfather) this Father’s Day.

Here is our recipe for an authentic mutton curry, prepared with love (and spices):

Ingredients:

1kg cubed leg or shoulder of lamb (bone in, trimmed of excess fat)

1 diced onion

1 diced/grated tomato

2 large peeled and quartered potatoes

1 tablespoon crushed ginger and garlic

4 curry leaves

4 – 6 teaspoons of medium/hot curry powder, depending on your taste

2 – 3 teaspoons of salt, added to taste

½ teaspoon turmeric

½ teaspoon each of coriander powder and garam masala

3 cups of water

Coriander (dhania) to garnish

Method:

Wash the meat and drain off. Add ginger and garlic, spices, curry leaves and one teaspoon of salt to the meat and combine well.

Heat the oil in a heavy bottomed pan. Gently sweat the onions until tender, then add the tomatoes and cook down for a few minutes.

Add in the marinated meat and one cup of water. Partially cover the pan and bring the contents to a simmer on a medium heat. Remember to stir regularly and add more water if the pan starts drying out.

Place the potatoes inside a jiffy bag and microwave on high for two minutes or until tender.

Once the meat is tender and the spices have cooked in, add more water and the potatoes, and allow the gravy to be soaked up.

Garnish with the dhania and serve with your favourite accompaniments.
