#WFD – Carrot and Sweet Potato Soup

Stir in the cream, place into serving bowls and drizzle with a little honey and some extra cream.

POLOKWANE – Soup is the perfect dish for cold weather as it’s guaranteed to warm you up.

What’s for Dinner says this delicious soup made from sweet potato and fresh carrots, drizzled with honey and served with hot bread, is a meal all on its own.

Ingredients

  1. 60ml margarine
  2. 1 large onion, chopped
  3. 5ml Robertsons Coriander
  4. 5ml ginger, grated
  5. 2ml Robertsons Turmeric
  6. 500g carrots, chopped
  7. 100g sweet potato, peeled and chopped
  8. 875ml chicken stock
  9. 125ml milk
  10. 1 x KNORR Creamy Garlic and Herb Potato Bake
  11. 150ml cream
  12. 7ml honey

Method

  1. Heat margarine in a large saucepan over medium heat.
  2. Add onion, coriander, ginger and turmeric and sautè until the onions soften.
  3. Add carrots and sweet potato to the pan and add the chicken stock, milk and sachet of Knorr Garlic and Herb Potato Bake.
  4. Bring to a boil and reduce heat to a simmer.
  5. Cook for 30 minutes until the carrots and potato are tender.
  6. Place the soup ingredients into a liquidizer and pureé until smooth.
  7. Stir in the cream, place into serving bowls and drizzle with a little honey and some extra cream.
  8. Garnish with a sprig of thyme.
