POLOKWANE – Usually on Christmas Day, mothers, aunts and sisters spend hours in the kitchen preparing a Christmas lunch, almost missing out entirely on creating memories with loved ones.

Local chef, Helen Mamabolo popularly known as Kamo_thePvtChef from Mankweng, hosts Sunday Chill out events, in a quest to unite people with her signature meals as well as introduce fine dining in Kasi (townships).

She gave this simple three-course recipe which she says will save time to allow for more family bonding and memories to be created as well as well as save mothers and sisters from exhaustion.

Starter: Quiche served with green salad.

Ingredients: depending on number of people prepping for.

• 6-8 large eggs

• 1 cream

• 1 tsp garlic

• Salt and pepper (sprinkled religiously)

• Bacon (strips)

For the Green Salad, you will need:

•1 lettuce head

• 1 cucumber

• Feta cheese

• 1/2 tomatoes

• Spring onion

Mix the ingredients.

Instructions: Beat the eggs while whisking add salt, pepper, garlic, cream and bacon.

Pre-heat the oven at 180 degrees C and place buttered muffin tray for two minutes to melt the butter before pouring in the quiche mix. Bake for 12 minutes. Allow to cool and plate the quiche and salad in a starter bowl and serve and then get on to the main meal.

This will be served with a main course of Vegetable Couscous with chicken breast and mushroom sauce and a dessert of ice-cream with a twist and fruits bites.
