#WFD – Creamy Chicken Pasta with Tomatoes and Mozzarella

Place under the grill until golden brown and serve.

POLOKWANE – There is nothing more satisfying than a delicious, hearty bowl of pasta.

A well made pasta can turn any bad day into a good day.

What’s for Dinner has combined all the essentials for a scrumptious pasta into one for this Creamy Chicken Pasta with Tomatoes and Mozzarella.

Ingredients

  1. 2 chicken breasts, whole
  2. 1 pinch Robertsons Atlantic Sea Salt
  3. Robertsons Freshly Ground Black Pepper (to taste)
  4. 250g bowtie pasta
  5. 2 tbsp stork margarine
  6. 1 tsp garlic paste
  7. 8 marinated sundried tomatoes
  8. 250g mushrooms, sliced
  9. 1 tbsp olive oil
  10. 1 x KNORR Creamy Mushroom
  11. 250ml water
  12. ¼ cup cream
  13. 1 tub smooth cottage cheese
  14. 1 cup mozzarella cheese, grated

Method

  1. Season the chicken with salt and pepper and grill the breasts on a griddle pan.
  2. Cut into strips and set aside.
  3. Cook pasta until al dente.
  4. In a pan melt margarine and lightly fry garlic.
  5. Add tomatoes and mushrooms, lightly fry.
  6. Prepare KNORR Creamy Mushroom Sauce following packet instructions, then add the cream.
  7. Add this to the sundried tomatoes and mushrooms.
  8. Add the cooked pasta and chicken strips, and toss through.
  9. Spoon into a baking dish.
  10. Spread with cottage cheese and top with mozzarella.
  11. Place under the grill until golden brown.
